Dr. Cathy Day

Dr. Cathy Day has more than 27 years of experience in agriculture, education, and environmental policy. Her work has taken her from agricultural development in West Africa to sustainable farming initiatives across the United States. Most recently, she served on the faculty at the University of New Mexico, researching farmer and rancher training programs. As Executive Director of Farm to Table, she is committed to advancing sustainable agriculture, food equity, and stronger communities throughout New Mexico.
